Y’all, I have finally perfected this AIP biscuits recipe and I am so excited to share it with you! Who doesn’t love warm, soft biscuits, fresh out of the oven for breakfast? These are perfect with a little drizzle of honey or some compliant strawberry jam.

The other exciting announcement about these breakfast biscuits, is that I have found they are still yummy warmed the next day! If you have any experience with AIP baking, you know that sometimes baked goods just are not the same the next day (to the point of not even enjoyable). This has been my experience with other AIP biscuits recipes I have tried. Yummy the first day, less than satisfactory the next.

Well friends, you no longer have to binge a whole batch of biscuits (unless you want to). Put leftovers in an airtight container in the fridge and warm in the microwave or oven the next day. They will be as good as fresh baked! Can I get some cheers?!

Biscuits with strawberry jam, breakfast sausage, and sweet potato hash.

AIP Biscuits Ingredients

  • 1 cup coconut milk
  • 1 tablespoon apple cider vinegar
  • 1 1/2 cups cassava flour
  • 1/2 teaspoon sea salt
  • 3/4 teaspoon baking soda
  • 4 tablespoons palm shortening

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper. 
  • Mix the coconut milk and apple cider vinegar in a small bowl and set aside.
  • In a large bowl, mix the cassava flour, sea salt, and baking soda.
  • Cut the palm shorting into the dry ingredients with a pasty blender or two knives until it is a crumbly mixture.
  • Add the wet ingredients to the dry and fold together until incorporated. You may need to use your hands to fully mix it together.
  • Mold into one large ball with your hands and then split it up into 6 equal balls with your hands or a knife. Form into 6 biscuits, about 1 inch or so high, and place on the baking sheet. The biscuits will not rise or spread during baking.
  • Bake for 20 minutes or until just barely beginning to golden at the edges.
  • Allow to cool for several minutes. They will slice easier once warm instead of hot. Use a bread knife to slice in half and add honey, palm shortening, or compliant jam, if you so desire. Enjoy!
  • Store leftovers in a container in the fridge for one or two days. For best results, warm in the microwave or oven before enjoying leftovers.
