Hot Chocolate

Now that it’s January, it finally feels like winter in southeast Texas, which basically means our weeks swing back and forth between shorts and sweater weather. Honestly, even if it’s not too cold outside, this hot chocolate is a decadent treat! It is creamy, rich, and smooth. Best of all, it’s only five simple ingredients and comes together in under five minutes. It’s seriously the easiest treat to whip up and get you back to making memories as you sip it with family, friends, or some quality self care time with a good book by a cozy fire.

Anyway, the cool days in Texas are finally cold, and our heater is finally on some nights. It even got below freezing a few times already (and I lost some flowers and plants in the garden). I am hoping we don’t have the record breaking freeze of last winter in 2021, but either way we are enjoying this hot chocolate on repeat! It’s just that delicious yet simple! 

Hot Chocolate Ingredients

  • 1 generous cup of almond milk (substitute coconut milk)*
  • 1 tablespoon cocoa powder (substitute carob powder for AIP)
  • 1 tablespoon collagen 
  • 1 tablespoon coconut sugar 
  • 1 pinch of salt 
  • Optional: small splash of vanilla 
  • Optional: AIP, Paleo friendly marshmallows

* I like to use vanilla flavored almond milk for my hot chocolate, but plain almond milk is just as good and you have the option of adding a splash of vanilla. Try it!

Instructions 

  • Pour your milk of choice into a microwavable mug and heat for about one and a half to two minutes. Alternatively, you can heat the milk in a small saucepan on the stove for a few minutes. 
  • Carefully remove the mug from the microwave and set it on the counter (or carefully pour the milk from the saucepan into a mug on the counter). 
  • Add the remainder of the ingredients and carefully mix with a fork to break up any clumps. Mix until smooth if you are not following the last step.  
  • Optional but recommended: use a frother to mix your hot chocolate until creamy. Enjoy! 
  • Optional: add my AIP, Paleo friendly marshmallows on top
