Nightshade free hamburger soup

We are officially in soup season! Especially now that we are somewhat having cooler temperatures down in east Texas. This nightshade free hamburger soup is delicious and hits that warm, comfort food spot! It’s simple and quick to put together.

Most hamburger soups (or recipes in general) have tomatoes or other nightshades. This hamburger soup is tomato and nightshade free, but you would never even guess! It’s so rich and yummy! Simply omit the pepper to make it AIP. This recipe also freezes well.

Pro Tip: This recipe doubles well. If you want to double it but save a few extra bucks, double everything but the KC Naturals Marinara. I think investing in that sauce is totally worth it, but it is a splurge. So, this is one way to maximize your dollar while still getting the flavor.

Nightshade free hamburger soup that hits the spot!

Nightshade Free Hamburger Soup Ingredients

  • 1lb ground beef
  • 1 red onion, diced
  • 2 cloves of garlic, diced
  • 2 stalks of celery, diced
  • 2 carrots, diced
  • 2 sweet potatoes, largely diced (between a chop and a dice 😉)
  • 1 jar of KC Naturals Marinara
  • 4 Cups of beef bone broth
  • 1/3 tbs oregano
  • 1/3 tbs basil
  • 1/4 tbs parsley
  • 1 tsp salt
  • ½ tsp pepper (omit for AIP)
  • 1 bay leaf

Directions

  • Brown the ground beef over medium high heat in a large stock pot. Begin to chop your vegetables while the beef is cooking.
  • Add the diced onion and cook for about 5 more minutes, until the onion begins to be translucent. Finish preparing your other vegetables while the onion cooks.
  • Add the garlic and cook for one minute, until you just begin to smell the garlic.
  • Then add the marinara and beef broth quickly, so the garlic does not burn. Then add the carrots, celery, sweet potatoes, oregano, basil, parsley, salt, and pepper. Stir and add the bay leaf on top.
  • Cover and bring to a boil. Then reduce to a simmer and let cook for 20 minutes or until the carrots and sweet potatoes are tender.
  • Turn off the heat and enjoy a bowl of soup! Store leftovers in an airtight container in the fridge for several days. Or freeze leftovers for an easy, reheat meal later.
