Breakfast is the foundational meal of the day, and this breakfast sausage is the perfect thing to fuel your morning with some protein to start the day! If you are new to the paleo autoimmune protocol (AIP) you may notice that it’s pretty challenging to find any prepackaged or premade sausage, as most contains nightshades. This breakfast sausage is quick and easy, but just as delicious and satisfying! I love to make a batch over the weekend to have an easy breakfast option during the week. It also pairs well with my AIP pancakes, scones, or biscuits.

Breakfast Sausage Ingredients

  • 1 pound ground pork
  • 1 teaspoon sea salt
  • 1 teaspoon ground sage
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon black pepper (omit for AIP)
  • 1/4 teaspoon cloves
  • 1 teaspoon maple syrup
  • 1-2 Tablespoons avocado oil (for the skillet)

Instructions

  • Warm the avocado oil in a large skillet over medium-high heat.
  • Mix all of the ingredients together in a large mixing bowl.
  • Form into 8 sausage patties.
  • Cook in the skillet for about 5-7 minutes per side.
  • Store leftovers in an airtight container in the fridge. Reheat in the microwave or warm for a few minutes in the skillet.
  • To freeze, store in an airtight freezer container or freezer bag once they are cooled. Remove from the freezer and thaw or use the defrost setting on the microwave. Reheat in the microwave or warm for a few minutes in the skillet.
