This week, I bring you a scrumptious chocolate chip cookies recipe that is Paleo and can be easily modified for AIP. I reintroduced chocolate back into my diet several months ago and have been making so many chocolate chip cookies lately that I unintentionally ended up making my own recipe. Hey, I am not complaining and I have to say, I am quite impressed with it! These cookies are nice and thick, with a crunchy exterior and chewy interior. Unlike so many Paleo and AIP baked goods, they do not fall flat. Yay!

If you know me, you know that I have quite the sweet tooth; I love chocolate and I love to bake! These factors made it pretty challenging to transition to Paleo, let alone AIP where I had to give up chocolate. Honestly, it deterred me from doing AIP for a couple of years. That being said, I am so grateful for my health journey and eventually taking the plunge with AIP. We can all do hard things, like giving up chocolate. 😉 

And if I may offer a ray of hope for those of you earlier in your own journey, two things. First, remember that AIP is not forever and you may eventually have success reintroducing chocolate. Secondly, for recipes like chocolate chip cookies, homemade carob chips really do make a satisfactory substitute. 

Alright, now for this new, yummy chocolate chip cookie creation! 

Chocolate chip cookie

Chocolate Chip Cookies 

  • â…” cup tapioca flour
  • ¼ cup cassava flour
  • 1 Tbsp. gelatin 
  • ¼ cup coconut sugar
  • 1 tsp. Baking soda
  • ½ tsp. Sea salt
  • ¼ cup maple syrup 
  • ¼ cup palm shortening
  • 1 tsp vanilla
  • ½ cup clean chocolate chips, I use Enjoy Life brand (substitute carob chips for AIP*)

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper. 
  • In a large bowl, mix the tapioca flour, cassava flour, gelatin, coconut sugar, baking soda, and sea salt. 
  • In a small bowl, mix the maple syrup, palm shortening, and vanilla until the mixture is mostly incorporated and creamy. 
  • Add the wet ingredients to the dry ingredients and mix until combined. It may be crumbly at first, keep mixing until it comes together.
  • Fold in the chocolate chips. 
  • Using a cookie scoop, portion your cookie dough onto the baking sheet. Gently flatten the cookie dough balls to form the cookies. Remember, they will not spread or flatten much in the oven.  
  • Bake for 10 minutes or until the edges begin to get golden brown. 
  • Cool for a few minutes and enjoy! Leftovers store well in an airtight container. 

*I prefer using this recipe from Unbound Wellness to make homemade carob chips for AIP. Simply spread in a shallow pan and cut into chips after it’s cooled.
