As many families are heading back to school within the next couple of weeks, I thought today I would share some simple, paleo back to school meals. These are easy to put together, wholesome, and nutritional, and kid approved. We will be using many of these, both for days we are homeschooling and days we are at co-ops.
Please note that I am not a nutritionist, just a mama striving to create healthy meals for my family (see my disclaimer here). Most moms, like myself, are the gatekeepers of health in their homes. We may not be able to force our child(ren) to eat a particular food, but we get to choose what we serve them. For us, this looks like a paleo template in our home.
In addition, many of us (myself included) also have children with special dietary needs. It can be intimidating to create gluten free, dairy free, etc. meals. After you learn to think outside the (lunch) box 😉, I promise it’s pretty simple. There are easy, healthy alternatives to the PB&J and fish crackers that so many of us grew up with.
When I am creating a healthy school meal, I try to include a protein, healthy fat, carb, and vegetable. It doesn’t always happen, but this is the goal. Especially to create a well-rounded template that will keep blood sugars stable and energy sustained.
Get your little one involved
If you really want your little one to get excited about their lunch, let them be a part of the process. Sit down with them and the list below and let them highlight or circle their top choices. Or you may have to read it out load and help them. That not only empowers them, it gets them excited about what they might find in their lunch each day. Take it a step further and let them help pack their lunch or make it all themselves.
Some of my daughter’s favorites are as follows: prosciutto, chomp beef stick, or Applegate deli meat. Carrot sticks with a Primal Kitchen Ranch dressing, Simple Mills crackers or plantain chips, and strawberries or applesauce. I purchase most of the non-perishables from Thrive Market. Either way, I hope this list brings you and your little one inspiration for paleo back to school meals! But remember, if all else fails, you can always send leftovers with them for lunch, too.
