Growing up, drip beef was a warm and welcome comfort food meal that my mom made. Usually, she’d make it on a busy day when our afternoons were filled with activities and we would come home to a delicious warm meal. I’ve revamped this recipe to be AIP, Paleo, and Whole30 friendly! This easy slow cooker drip beef recipe is perfect as we move into the cooler months of the year. Serve it over a compliant dinner roll or bun and dip it in the broth, or simply serve it with roasted veggies of your choice!
Serves: 6 people, depending on the size of your roast
Ingredients
- Chuck roast beef
- 3 TBS rosemary
- 1 TBS summer savory
- 1 tsp salt (more to taste depending on how salty your bone broth is)
- 1/4 tsp black pepper (omit for AIP)
- 2 cups beef bone broth
- 1 onion, quartered
- AIP dinner rolls or buns (optional)
Slow Cooker Drip Beef Instructions
Add all of the ingredients to the slow cooker, with the onion on top of the roast. Cook on low for 8 hours or on high for 4 hours (time may vary with your slow cooker). That’s it!
If you have a yummy recipe for compliant dinner rolls or buns that hold together well, this recipe is delicious served sandwich style and dipped in the broth. I have enjoyed it with this AIP garlic and herb roll recipe as well as this AIP classic dinner roll. It’s also wonderful served with a side of roasted vegetables or even on top of the veggies!
